This past Tuesday I was hired by Sloan Events to create an Hor d’Oeuvres party for Yuli Ziv of the Style Coalition. The event was for Sears and we served several, small, flavorful bites of food. The menu consisted of:
Mini Moroccan Meatballs
Cumin spiced beef, braised in a fire roasted tomato sauce
Crab cakes with Saffron Aioli
Jumbo lump crab and cilantro, pan-fried topped with saffron aioli
Bacon Wrapped Dates
Stuffed with goat cheese and almonds encased in crispy bacon
Avocado Roll
Rice paper filled with scallion, carrot, mint, cucumber, mango, and avocado
Mini Quiche
Baked custard filled with goat cheese and herbs

Avocado and Mango Spring Rolls
A shot of all the hor d’oeurves
I wanted to share with you how easy it is to create a simple one bite hor d’oeurve for your guests.
Avocado and Mango Spring Roll
1 ripe mango, peeled and julienne
1 seedless cucumber, julienne
1 large carrot, peeled and julienne
1 bu scallion, sliced thin
1 bu mint, chiffonade
2 avocados, sliced into strips
10 spring roll wrappers
Hot water
Sesame seeds for decoration
Hoisin sauce, for dipping
- To start, prepare all your vegetables for the rolls. Peel both carrots and mango, slice all items paper thin.
- Once all items are cut and set aside, you can start assembling the rolls.
- Grab a large bowl and fill it with hot tap water.
- Place 1 wrapper into the water at a time, once it becomes soft, remove it from the water.
- Place it down on the board, in the middle of the roll place a small amount of each of the fillings.
- Take the bottom end of the wrapper and roll it over the filling, fold in the sides and start rolling very tightly.
- Once rolled all the way up, sprinkle with sesame seeds.
- Repeat this process until you have made 10 rolls, wrap each one in plastic wrap so they do not stick together.
- Refrigerate and right before serving, slice into 1 inch think slices on the bias.
- Serve with hoisin sauce on the side.
This is a light and perfect hor d’oeurve to serve to any guest or party.
